In the app: Settings → Account → Delete Account. It is immediate and permanent. If you have already uninstalled the app, see Delete your account. The Privacy Policy lists exactly what is erased.
Progress is tied to your account, not to your device. Sign in with the same method you originally used — email, Apple or Google. Guest progress lives only on the device it was played on until you create an account.
